Frequently asked questions

The questionsyou ask us

What a cru honey is, why it crystallises, how to order. If your question isn't here, write to us.

What is cru honey?

The term “cru” is borrowed from winemaking and means a honey from a single geographical origin, never blended with honey from other areas. Our cru honey comes only from our stationary hives at Lake Conza (AV): it is not pasteurised and only lightly filtered, so the enzymes, pollen and aromas of the land stay intact.

Why does honey crystallise? Is it a sign of poor quality?

No, quite the opposite. Crystallisation is the most reliable sign that the honey has been neither heated nor adulterated. All pure honeys crystallise over time; how fast depends on the floral variety. Acacia honey crystallises slowly (it is high in fructose), while Millefiori crystallises sooner. To make it runny again, warm it in a bain-marie at no more than 40 °C.

What does “stationary beekeeping” mean?

Our hives stay in one single place all season, rather than being moved around in search of different blooms. This guarantees honeys with a precise, traceable sense of place: like a single-vineyard wine. Most industrial producers practise “migratory beekeeping”, moving hives to maximise yield at the expense of character.

Is your honey organic?

Our honeys are produced with practices that respect the wellbeing of the hive: no antibiotics, no pasteurisation, entirely natural feeding. There is no intensive farming in the Conza Oasis. Formal organic certification is being considered: in the meantime, our method page documents every production practice in detail.

How can I order?

Write to info@viedellagoapicoltura.it or on WhatsApp. We'll reply within 24 hours with availability and a shipping quote. We ship anywhere in Italy by tracked 24/48h courier. Free shipping on orders over €60.

Why are Millefiori and Acacia sold out?

Production is deliberately limited: each honey is a small seasonal batch. When the year's production is sold out, we don't make more: out of respect for the vintage. You can join the waiting list for the next vintage by writing to us from the Contact.

How long does honey keep? How should I store it?

Pure honey, stored correctly, does not go off. By law the label carries a “best before” date of 2 years. Store in a cool, dry place, away from heat and direct light. Don't keep it in the fridge – moisture can encourage fermentation.
